Irresistible German Chocolate Poke Cake

This decadent cake combines moist chocolate layers, gooey coconut pecan filling, and a luscious chocolate ganache. Perfect for any celebration!

Ingredients:

  • Chocolate Cake: 1 box chocolate cake mix (+ ingredients listed on the box: eggs, oil, water), 1/2 cup sour cream (optional for extra moisture)
  • Coconut Pecan Filling: 1 can (14 oz) sweetened condensed milk, 1/2 cup caramel sauce, 1 cup sweetened shredded coconut, 1 cup chopped pecans
  • Chocolate Topping: 1 1/2 cups heavy cream, 1 1/2 cups semi-sweet chocolate chips, 1 tsp vanilla extract
  • Garnish: Extra shredded coconut (toasted), chopped pecans, chocolate shavings (optional)

Directions:

  1. Bake the Chocolate Cake:
Preheat your oven according to the cake mix instructions. Grease a 9×13-inch baking pan. Prepare the cake mix as directed on the box, adding sour cream for extra moisture if desired. Pour the batter into the prepared pan and bake according to the package instructions. Once baked, allow the cake to cool in the pan for about 10 minutes.
  2. Make the Coconut Pecan Filling:
While the cake is cooling, mix the sweetened condensed milk and caramel sauce in a medium bowl until smooth. Stir in the shredded coconut and chopped pecans until well combined.
  3. Poke and Fill the Cake:
Using the handle of a wooden spoon or a straw, poke holes all over the top of the slightly cooled cake. Pour the coconut pecan filling over the cake, spreading it evenly and making sure it seeps into the holes. Refrigerate the cake for at least 1 hour to allow the filling to set.
  4. Prepare the Chocolate Topping:
In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat and pour the cream over the chocolate chips in a heatproof bowl. Let it sit for 2 minutes, then whisk until smooth and glossy. Stir in the vanilla extract and let the ganache cool slightly until it thickens enough to spread.
  5. Assemble the Cake:
Once the cake is fully cooled and the filling is set, spread the chocolate ganache evenly over the top. For a finishing touch, garnish with extra toasted coconut, chopped pecans, and chocolate shavings if desired.
