Ingredients:
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 12 wonton wrappers
- 1 cup shredded cheddar cheese
- ½ cup salsa
- ¼ cup sour cream
- ¼ cup diced tomatoes
- ¼ cup chopped cilantro
- 1 jalapeño, sliced (optional)
Directions:
Prep the Beef:
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef over medium heat until browned.
- Drain excess fat, then stir in the taco seasoning and a bit of water according to the seasoning packet instructions.
- Let it simmer for a few minutes to let the flavors meld.
Assemble the Cupcakes:
- Spray a muffin tin with non-stick cooking spray.
- Place a wonton wrapper into each cup, pressing it gently to fit the shape of the cup.
- Spoon a tablespoon of the taco meat into each cup, then top with a bit of salsa and shredded cheese.
- Place another wonton wrapper on top and repeat the layers with meat, salsa, and cheese.
Bake:
- Bake the taco cupcakes in the preheated oven for about 10-12 minutes, or until the edges are golden brown and crispy.
