Taco Tuesday Upgrade: Taco Cupcakes

Give your Taco Tuesday a fun twist with these easy and delicious Taco Cupcakes! Perfect for any gathering, these bite-sized treats pack all the flavors you love into a crispy wonton wrapper.

Ingredients:

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 12 wonton wrappers
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • ¼ cup sour cream
  • ¼ cup diced tomatoes
  • ¼ cup chopped cilantro
  • 1 jalapeño, sliced (optional)

Directions:

Prep the Beef:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, cook the ground beef over medium heat until browned.
  3. Drain excess fat, then stir in the taco seasoning and a bit of water according to the seasoning packet instructions.
  4. Let it simmer for a few minutes to let the flavors meld.

Assemble the Cupcakes:

  1. Spray a muffin tin with non-stick cooking spray.
  2. Place a wonton wrapper into each cup, pressing it gently to fit the shape of the cup.
  3. Spoon a tablespoon of the taco meat into each cup, then top with a bit of salsa and shredded cheese.
  4. Place another wonton wrapper on top and repeat the layers with meat, salsa, and cheese.

Bake:

  1. Bake the taco cupcakes in the preheated oven for about 10-12 minutes, or until the edges are golden brown and crispy.

Garnish and Serve:

  1. Remove the taco cupcakes from the oven and let them cool slightly.
  2. Top each with a dollop of sour cream, diced tomatoes, chopped cilantro, and a slice of jalapeño if you like it spicy!
