  • 20 to 24 giant shells
  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 tablespoons taco seasoning

  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (10 ounces) Rotel tomatoes, drained (or diced tomatoes)
  • 1 jalapeño or serrano pepper, finely chopped
  • Green onion (optional garnish)

Instructions:

  1. Preheat the oven to 350 degrees. Spray a 9×13-inch baking dish with non-stick cooking spray.
  2. Bring a large pot of water to a boil. Cook the giant shells according to package instructions and drain well.
